1. Cut the raw mango in cube or any shape
2. Put the cutted mango in pot or in pickle jar
3. Add water upto the mangoes are completely immersed
4. Add turmeric powder and salt
5. Keep aside for 1 day
6. Next day take mango from pot or pickle container and dry them under sun
7. In the evening again put the sun dried mango in pickle container along with that water(turmeric and salt mixed water)
8. Next day also same procedure upto the mangoes absorbed complete water
9. Dry the raw mango under sun
Now raw mango is ready(sun dried mango can be used yearly also)
For pickle preparation
1. Take the sun dried mango and put that in hot water(not in hot water, somewhat in cold condition)
2. In pan without oil add fenugreek seeds and fry
3. Now add red chilli, fried fenugreek seeds in mixie and make powder
4. In another pan add oil, mustard seeds, asafoetida, redchilli and fenugreek seeds, salt little amount and then add the raw mangoes immersed in hot water.
Now mango pickle is ready
Like this using the sun dried mango we can make pickle as we needed. And the raw mango can be used for 1 year or above that too.. just have to dry them monthly or two months once under sun
